Slower game speeds make it more likely that you hit certain resource thresholds, like for city growth, policy choices or research, without any overflow. There is only a small difference, which concerns the edge you get from good micromanaging. On quick speed, everything is scaled, so if you catch up by say 500 AD on standard speed, you will still catch up in about 500 AD on quick speed as well. That's not really the reason, or at least it's not very well explained.
